I would love to post multiple pics but they never attach with my instructions.

So I have leftover Squash with Spinach pesto topped with cucumbers, carrots, cabbage & tomatoes w/ crushed almonds garnished around it.

Pesto: blended spinach, almonds, leftover spicy salsa, olive oil, squeezed lemon juice, lil water, garlic, red pepper flakes, dry seasoning (basil, oregano, Italian) & black pepper.

Mixed the squash & sauce in a pan until hot & serve.

Blended almonds as a garnish (in my head it’s parmesan cheese)

I think I’m becoming a detox chef πŸ‘¨πŸΎβ€πŸ³
