First, I’ve never made squash before and I bought the wrong squash (I bought 3 small squash) instead of the large spaghetti squash 😳so hubby saved the day & bought the right one for this delicious dinner
Spaghetti Squash: Take 1 large spaghetti squash & split it, remove the seeds & sprinkle with olive oil & cracked black pepper and cook in the oven at 400 for 40 minutes.
Once done let it cool and make your sauce and veggies.
Sauce: Cut 2 tomatoes & add no salt tomato paste in a blender
Vegetable: I sautéed kale, spinach, mushrooms, garlic, onion, green, red & yellow pepper, squeezed lemon in olive oil with dry seasoning (oregano, Italian, basil, parsley & black pepper)
Next pour the sauce in the pan with vegetables & stir and add sun dried tomatoes
Last, scrape squash with a fork, plate & demolish it! 💋
